Bagali Pilau

Nura’s recipe

Smoked meats, such as smoked chubs (fish) or Polska Kielbasa, go well with this dish.

Servings: About 4

Ingredients for bagali pilau

1 c. uncooked rice

5 oz. frozen lima beans

2 T. dried parsley

2 T. dried dill

Garlic powder

Instructions

Step 1: Use the “Basic Rice” method, adding the lima beans to the boiling rice after it has been boiling 5-6 minutes. Drain and rinse the rice/beans.  

Step 2: Mix the dill and parsley with the rice. Sprinkle the rice with garlic powder and combine. Proceed with the “Basic Rice” method.

Layli’s Reflections

I remember having this pilaf often in childhood, usually with kielbasa—an interesting Persian-Polish fusion! This was my first time making it, and I was surprised at how easy it was. I doubled the recipe; I think next time I’ll triple it, since it earned rave reviews from my husband. Because it features hearty lima beans, the dish could be served on its own or with a salad as a filling vegetarian entrée.
